Would it be possible to have a Task that includes a Barcode. When the task is completed the assignee can scan a barcode when they finish/complete that task.

I’m not sure what are you trying to get; i suggest you tell the community more detail about the use case and maybe someone can give ideas.
On the technical side, Taiga automatically doesn’t generate barcodes or qrcodes, but you can use the public API and create your own integration.
