Hello, I was able to change the language of my profile from the account settings, but new users have their language set to English by default. I would like the platform to default to Spanish for all new users. Is it possible to define this behavior in the .venv variables?

No en las variables de entorno, pero deberías poder configurar el idioma por defecto desde conf.json de Taiga front, cambiando el parámetro defaultLanguage.
