How would you see user stories across multiple projects on one kanban. Say for example you had 5 clients with 2 projects each - and 5 developers - how could you see and allocate all 10 projects in the one kanban?

Unfortunately, Taiga does not have cross-project functionality built in. The only way to handle stories from multiple projects is through Epics, as you can link an Epic to a Story that belongs to another project.
